What makes the difference is how many times each step is repeated before anyone is allowed to move on to the next one. 1. One ### Grain selection Wheat for softness, rye for structure. Both are graded before milling; anything that fails goes back. 2. Two ### Mash and ferment Milled grain meets glacial water. Fermentation is run slow and cool to keep harsh congeners from forming in the first place. 3. Three ### Ten distillations Each pass narrows the cut. By the tenth, what remains is almost entirely the part of the spirit worth keeping. 4. Four ### Five filtrations Activated charcoal strips what distillation left behind.
